A BAKERY in Stoke Row has been named one of the top 13 artisan bakeries in the UK — known as “the Baker’s Dozen” in the industry.
Imma the Bakery has been recognised once again — having already seen its head baker Tona Erreguin snap Baker of the Year 2025 at the Baking Industry Awards.
Her vision for “real bread”, focused on traditional methods and sustainability, has seen the bakery turn into a destination for bread enthusiasts.
Organised by British Baker and The Artisan Collective, the Baker’s Dozen list is voted for by more than 100 industry experts.
Ms Erreguin said: “I think it’s testament to the work all the team puts into the everyday baking.
“Everything to do with bread is dealing with another living organism, a live culture. You can’t ever replicate the same recipe twice. We’re working with something that’s a little bit untamed. We have to observe for humidity, air pressure, time, heat — everything counts. It’s like trying to achieve close to perfect results every day even though everything changes.
“There are always different challenges every day and we push to become better and try to do something really interesting every day.
“We are never happy just sitting on one achievement. Every day we face [our work] with renewed energy and renewed desire to excel at what we do.
“We try to push to create something that touches the soul of someone rather than just feed you.”
With the Baker’s Dozen accolade, Imma the Bakery — known for its for artisan sourdough — expects to see an influx of “bread tourists”.
Mrs Erreguin also runs the Cherry Tree in Stoke Row, a 400-year-old pub which she took over in August last year.
