The idyllic riverside restaurant premises in Bourne End that was formerly brasserie On The Thames (OTT) is set to re-open as an all-day dining venue.
Coffee and wine specialist Coopers has revealed its plans to open a British/European-style eatery before the end of the year in the two-storey building in Bourne End Marina. The premises has been empty since October.
In the spring Coopers also plans to open a coffee and sandwich shop at 21 The Parade.
Formerly the salon Beauty Secrets, it will be called Coopers Tuck Shop and serve freshly-roasted coffee and home-made sandwiches and baguettes for takeaway or to eat in.
Overseeing both openings is 32-year-old James Patch, who lives in Frank Lunnon Close, and his US-based business partner Adrian Thomas, who also owns a vineyard in Australia.
Expert coffee roaster James and Adrian always planned to roll out the Coopers brand - named after James' loyal black Labrador - across the area following the success of their first cafe which opened in Marlow Industrial Estate in May.
The pair will make the marina restaurant its flagship venue.
Due to be named Coopers Riverside, the space spans 2,730sqft and has a wrap-around balcony, ideal for al fresco dining overlooking the Thames.
It is due to seat approximately 60 covers and serve breakfast, lunch and dinner, with a key focus on new world wine.
Ideas include creating a signature burger and holding wine tastings.
The operation will be headed up by 24-year-old chef Shaun Jones.
James said: "We are aiming to create a relaxed environment where people can enjoy the best food without it being complicated and precocious."
He added: "We want customers to feel part of the place."
James hopes to make the restaurant more open plan and welcome in visitors for drinks as well as food.
He said: "In order to be eclectic each premises is going to be slightly different, just to create a great brand that people are excited to come to."
The OTT premises was let by Davis Coffer Lyons on behalf of landlord Sorbon Estates Limited.
