RECIPE: Healthy Caribbean Rice and Curried Chicken

Here is the recipe for the healthy dish Cox Green Senior and Wessex Junior schools made this week in their Let's Get Cooking class.

 Ingredients:

1 green or red pepper
1 clove garlic
2 fresh tomatoes
1 onion
2 tsp curry powder
2 cups long grain rice
4 chicken thighs
1 tbsp cooking oil
2 tsp sugar
1 can black eyed beans
1 stock cube

Method:

Remove skins from chicken thighs. Put in a bowl and mix with salt and pepper and curry.
Wash, remove seeds and dice pepper.
Crush garlic.
Dice onion.
Put the oil in a saucepan with 2 tsps sugar and  heat very carefully until the sugar starts to caramelise (turn golden brown).
Add the chicken and fry until brown.
Add the onion, garlic and peppers and cook then add the tomatoes.
Add some water to cover the chicken and a stock cube. Bring to the boil and simmer until the chicken is thoroughly cooked.
Meanwhile put some water in a saucepan and boil the rice for approx 10-12mins until soft. Add some black eyed beans.
